Prepped Vegetables Are a Real Timesaver

I picked up some beautiful Haricot Verts (French for Green Beans) at Sam’s Club which is where I coincidentally picked up the FoodSaver ๐Ÿ˜‰

Before freezing the beans it is a good idea to blanch them so that they retain their beautiful color and texture.

Boiling water

Make sure that your pot of water is at a rolling boil.

Stir water

Stir some salt in for flavor.  The water should taste slightly salted.

Trim and rinse the beans so that they are clean and ready to go.

Drop Beans

Then drop them in.

Blanching Beans

Stir and bring back to a boil.  Boil for just 2 to 3 minutes until they are bright green and still a bit crisp.

Cooling Beans

Remove them and put them into a large bowl of ice water.  This will stop the cooking process and lock in the color.

Once they’ve cooled and drained it’s time to make a bag.  This model FoodSaver has a handy cutting guide which make the process a whole lot easier.

Pull out the plastic sheet to the size that you need.  Use the sliding cutter

and cut to the desired size.  This is really great because you can make a bag as small or large as you need.

Place one of the open ends in the sealer and seal.  The machine does this automatically for you!  Love that!!

Place the beans (or whatever it is that you are saving) inside of the bag.

Place the open end in the vacuum sealer and the machine will begin removing the air from inside the bag.

Protect Delicate Foods

When it is finished it will automatically seal.  You can also press the seal button before it has finished pulling all of the air out.

Blanched Green Beans

Blanching green beans locks in their flavor and texture. Storing them this way makes preparing them later a snap!

Ingredients

Scale

1 package green beans

4 quarts water

Kosher Salt

Instructions

  1. Trim and rinse the green beans.
  2. Bring 4 quarts of water to a boil in a large pot.
  3. Salt the water so that it tastes briny.
  4. Drop the beans in and cook for about 2-3 minutes until they are crisp tender.
  5. Remove the beans and place into a bowl of ice water to stop the cooking.
  6. Drain well.
  7. Use immediately or place into a freezer bag and seal.
  8. Be sure to label and date if storing.ย 

Notes

For the best quality use the stored frozen beans in six to eight months.

    That $600 in wasted food per year per family figure is so true. I tallied up in 2016 what I thought we could save if I had prepared meals in advance and vacuum sealed them with a foodsaver. Easily $600 in savings. Great guide!
