Okay, so it’s here. What you all have been waiting for…

So Good! Sweet and Spicy Wings!!
These sweet and spicy wings are making me hungry! It’s not quite lunchtime for me yet, but, I have to say – just looking at the picture of these are making my mouth water! They have to be the BEST boneless chicken wings that I have ever had! Ever since I came up with this recipe my teenage son will occasionally get a big grin on his face and ask, “hey Mom, can you make me some wings?”

Warm Spices Add Depth To Wings
Of course, as with everything, flavors are added from start to finish. First, flour is seasoned with warm spices – ground cinnamon, Spanish paprika and smoked Spanish paprika. Then…

Work Neatly When Working With Chicken “Wings”
…set aside while the rest of the ingredients are prepared. It is always a good idea, especially when working with chicken, to have everything set up so that you can work quickly and avoid cross contamination – food safety should always be at the top of your thought process.

Season the Wings
The “chicken wings” are seasoned with Kosher salt on both sides before being coated with the flour. This helps to ensure that they are well seasoned and moistens them so that they hold onto the seasoned flour mixture.
You can flour them in one of two ways:

1. On a plate with a fork.

My Favorite Way To Season Wings
2. Or, in a large Ziploc bag. Just seal them in with some air and give them a good shake.
Set them on a tray for a few minutes while you bring your oil up to temp.

Make Sure The Oil is Hot for the Wings
A good way to test if the oil is ready is by placing the end of a wooden spoon into the oil. If bubbles appear rapidly around it, your oil is ready.

Shallow Fry the Wings
Place those babies into the oil laying them away from you so you don’t get splashed and be sure to leave room around them in the pan so that they get nice and golden. When they start to turn opaque around the edges and the bottoms are golden, flip them.
Let them fry a few minutes more on the second side then test them with an instant read thermometer. They are done when the internal temperature reaches 160 degrees F. (If they go over a bit that’s OK.) Just be careful, too high and they’ll dry out.

Drain the Wings
Remove them with a slotted spoon and drain them on a paper towel lined plate. Place another batch of chicken in the oil then give those cooked wings what they’ve been waiting for…

Finish the Sweet and Spicy Wings

Serve the wings with my homemade ranch dressing or the dressing of your choice.


Just letting you know – I once tried using a boxed mix of ranch dressing and now my son has forbade me from taking that shortcut. The homemade is SO MUCH Better. And when you taste the seasoned wings, dressed with THAT sauce and dipped in THAT dressing…OMG!
(Warning this can be an addictive recipe)
For a party, or a very hungry teenager you can double the recipe and use a family sized pack of boneless, skinless chicken breasts.

Ingredients
- 4 large skinless, boneless chicken breasts
- Olive oil
- ½ cup AP Flour
- ¾ tsp. ground cinnamon
- ½ tsp. ground paprika
- ½ tsp. ground smoked paprika
- Kosher salt to season
- ¾ cup Sweet & Spicy Sauce in medium bowl (recipe to follow)
- Ranch Dressing for dipping (recipe to follow)
Instructions
- Mix flour, cinnamon, paprika and smoked paprika in a Ziploc bag.
- Clean and cut chicken into 1” x 2” pieces and season with kosher salt.
- Toss seasoned chicken pieces in flour mixture and shake off excess.
- Heat 10” skillet with ½ cup olive oil over medium-high heat. When oil is shimmering add chicken pieces and fry in batches until golden on both sides and internal temperature measures 160° F.
- Drain cooked pieces on a paper towel lined plate then toss in Sweet & Spicy sauce.
- Serve hot with the Cool Ranch Dressing.
Sweet and Spicy Sauce
Super simple Sweet and Spicy Sauce with Smoked flavor. Great on grilled meats

Ingredients
- 1 small bottle (12 oz.) of Frank’s hot sauce
- 1 cup firmly packed light brown sugar
- ¼ tsp. liquid smoke
Instructions
- In a medium bowl mix the hot sauce, brown sugar and liquid smoke until sugar is dissolved.
- Serve with Sweet and Spicy Boneless Chicken Wings or grilled meat.
Cool Ranch Dressing
Cool Ranch Dressing. Great for dipping or on a salad.

- Total Time: 10 minutes
- Yield: 2 cups 1x

Ingredients
- 1 ½ cup sour cream
- ½ cup Hellmann’s mayonnaise
- 2 Tbsp. milk
- 1 Tbsp. white wine vinegar
- 1 Tbsp. lemon juice
- 1 Tbsp. chopped fresh dill
- 1 Tbsp. chopped fresh thyme (or 1 tsp. dried)
- 1 Tbsp. chopped fresh chives
- 2 tsp. oregano
- 2 tsp. granulated sugar
- 1 garlic clove pressed and made into a paste with 1 tsp. kosher salt.
Instructions
- Combine all ingredients. Refrigerate for 2 hours or overnight.
- Serve with Sweet and Spicy Boneless Chicken Wings or on salad.
